  1. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and 1 tablespoon of sugar. Pour in the 6 tablespoons of melted butter and mix until the crumbs are thoroughly moistened and resemble wet sand. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan. Bake the crust in a preheated oven at 350ºF (175ºC) for 8 minutes. Remove and let it cool completely while you prepare the filling. Keep the oven on.
  2. Begin Cheesecake Filling: Using a stand mixer fitted with the paddle attachment, beat one package of the room-temperature cream cheese, ⅓ cup of the granulated sugar, and the cornstarch together on low speed. Pour hot water into the larger pan, ensuring it comes halfway up (approximately 1 inch) the sides of the springform pan. (Note: As a preferred alternative, I chose not to add a caramel layer within the cheesecake, but instead drizzled each individual slice with caramel sauce as I served it, allowing for a cleaner cut and fresh presentation.)
  11. Apply Ganache and Chill: Pour the slightly cooled chocolate ganache evenly over the top of the cheesecake. Gently tilt the pan to ensure the ganache spreads to the edges. Return the cheesecake to the refrigerator and chill for several hours, or preferably overnight, until the ganache is fully set and firm before unmolding from the pan. If desired, you can top the cheesecake with chopped fun-sized Twix bars before the ganache sets completely or just before serving.
  12. Serve Your Masterpiece: Once thoroughly chilled, carefully remove the sides of the springform pan. Use a sharp, thin knife (warmed in hot water and wiped clean between slices for best results) to cut the cheesecake into slices. Caramel Layer vs. Topping: You have the option to add a layer of caramel sauce directly onto the chilled cheesecake before pouring the ganache. However, be aware that if you add a caramel layer, it may ooze out slightly when you slice the cheesecake. My personal preference is to omit the internal layer and instead drizzle generous amounts of caramel over each slice as it’s served. Both methods are incredibly tasty, so choose what you prefer for presentation and experience.

Ganache Consistency: I have successfully used this ganache recipe with 12 ounces of chocolate for other cheesecakes, and my videographer also had excellent results. However, I have received a couple of comments mentioning their ganache wasn’t thick enough. To ensure your ganache sets properly and achieves a firm, sliceable texture, you may wish to add an additional 4 ounces of finely chopped semisweet chocolate (making it 4 Ghirardelli bars instead of 3). This extra chocolate will provide more stability.

Springform Pan Depth: It’s crucial that your 9-inch springform pan has an interior depth of at least 2½ inches to comfortably accommodate all the cheesecake batter. If you don’t use the paddle attachment on your mixer, or if you overmix with a whisk, you might incorporate too much air, which can cause the batter to exceed the pan’s capacity.
