- Preheat the oven to 350 degrees F (175 degrees C).
- Microwave the butter until melted.
- In a mixer, beat the melted butter with both sugars until creamy and well combined.
- Stir in the vanilla extract and then beat in the egg until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or with a wooden spoon just until combined and no dry streaks of flour remain. Do not overmix.
- Fold in the chocolate chips. Cover the dough and chill in the refrigerator for at least 1 hour. This helps prevent spreading and enhances flavor.
- Scoop balls of chilled dough onto parchment-lined cookie sheets, leaving about 2 inches between cookies. Bake for 9-11 minutes, or until the edges are set and lightly golden, but the centers still look slightly soft. Watch carefully to avoid overbaking.
