Why You Must Make These Strawberry Shortcakes with Olive Oil Cake

If you’re looking to transform a classic into an unforgettable culinary experience, these olive oil shortcakes are an absolute must-try. Here’s why this recipe deserves a permanent spot in your dessert repertoire:

  • Unparalleled Moisture and Texture: The inherent properties of olive oil lend themselves beautifully to baking, resulting in cakes that are exceptionally moist, tender, and possess a finer crumb than traditional shortcake biscuits. This means a dessert that stays fresh longer and melts in your mouth with every bite.
  • A Masterpiece from Thomas Keller: This isn’t just any shortcake recipe; it’s an adaptation from the legendary Thomas Keller, featured in his acclaimed Bouchon Bakery cookbook. Keller, renowned for his meticulous approach and profound understanding of flavor, brings a level of sophistication and balance that truly sets this recipe apart. Baking from one of his books is an experience in itself, promising delicious results.
  • The Epitome of Seasonal Delight: Strawberry desserts are synonymous with freshness and joy. These shortcakes are perfectly suited for Easter celebrations, spring gatherings, and all through the vibrant summer months. They embrace the bounty of the season, showcasing ripe, juicy strawberries in their most delightful form.

The Inspiration: Thomas Keller’s Bouchon Bakery Shortcake Recipe

The culinary journey that led to this remarkable shortcake began with an unforgettable experience at one of Thomas Keller’s esteemed establishments. My singular trip to Las Vegas was meticulously planned to include dinner reservations at Bouchon, a highlight that left a lasting impression. My husband, Bill, was so enamored with the experience that it became a mandatory stop on his subsequent biennial business trips to Sin City. While I couldn’t always join him, my request was simple: bring back a cookbook. This tradition served us well for a time, enriching our kitchen with Keller’s masterpieces, but eventually, our collection was complete!

Discovering this recipe for strawberry shortcakes with olive oil cake was an immediate source of excitement. I instinctively knew it would be a winner. The concept of using olive oil in a cake, while perhaps less common in traditional American baking, is a well-established and cherished practice in European culinary traditions. I recall Dorie Greenspan, another baking luminary, often incorporating olive oil into her exquisite Parisian loaf cakes, highlighting its ability to impart unique flavor and incredible moisture. My eagerness to try this sophisticated strawberry dessert was matched only by my certainty that my family, ardent lovers of all things strawberry shortcake, would adore this elegant, fresh fruit creation. It represents a beautiful fusion of rustic charm and refined flavor, making it a truly special treat.

Elevating Your Shortcake: Expert Baking Tips for Perfection

Creating the perfect strawberry shortcake, especially with a sophisticated olive oil cake base, involves a few key details that can make all the difference. Follow these expert tips to ensure your dessert is nothing short of spectacular:

  • Select the Finest Strawberries: The strawberries are truly the star here, so their quality is paramount. Seek out berries that are deeply fragrant, uniformly red, and free of any green or yellow areas around the stems. Local, in-season strawberries, when available, will always provide the best and most vibrant flavor. Gently wash them just before use and hull them carefully to preserve their shape and freshness.
  • Proper Cake Storage for Optimal Freshness: Whether you’re making traditional sweet biscuits or these exquisite olive oil cakes, proper storage is crucial to prevent them from drying out. The beauty of an olive oil cake is its natural resistance to staleness; it will remain beautifully moist for longer than most biscuit-based shortcakes, which are best enjoyed within a day or two. Store the olive oil cake rounds in an airtight container at room temperature for up to 3-4 days, or refrigerate if your kitchen is particularly warm. If assembled, shortcakes are best enjoyed immediately, but components can be stored separately.
  • PRO-Tip: Ensure Your Baking Powder is Fresh: This seemingly small detail can significantly impact your cake’s rise and texture. Baking powder is often used less frequently than baking soda and can lose its potency while sitting in your cabinet. To test its freshness, simply add a teaspoon of baking powder to about a quarter cup of hot water. If it fizzes and bubbles vigorously, it’s fresh and ready to use. If not, replace it before you embark on making this delicate dessert to guarantee a light and airy cake.
  • The Importance of Room-Temperature Eggs: As with most cake recipes, using room-temperature eggs is highly recommended. Eggs at room temperature emulsify more easily with sugar and other ingredients, creating a smoother, more uniform batter. This leads to a finer, more tender cake crumb, ensuring your shortcakes achieve their desired delicate texture.
  • PRO-Tip: Grease Your Pan with Olive Oil: For an olive oil cake, embracing the ingredient fully extends to preparing your baking pan. Greasing your pan with olive oil actually works more effectively than butter, which can sometimes lead to sticking due to its milk solids. Olive oil provides a smooth, even coating that helps the cake release effortlessly, ensuring your beautiful cake rounds maintain their perfect shape.
  • Whip Your Cream to Perfection: For the ultimate topping, ensure your heavy cream is very cold before whipping. Using a chilled bowl and whisk attachments can also help achieve perfectly stiff peaks. Sweeten it lightly with powdered sugar, which dissolves more readily than granulated sugar, and avoid over-whipping to prevent a grainy texture.
  • Assemble Just Before Serving: To prevent the cake from becoming soggy and to maintain the pristine presentation, assemble your shortcakes just before serving. This ensures the cake remains tender, the strawberries are at their freshest, and the whipped cream holds its airy texture.

Frequently Asked Questions: Your Olive Oil Shortcake Queries Answered

Why Make Olive Oil Cake Instead of Traditional Shortcake?

The primary reason lies in the superior moisture and unique flavor profile. Europeans have cherished olive oil cakes for centuries because the subtle, fruity taste of good quality olive oil is intoxicating and adds a sophisticated depth. Moreover, olive oil acts as a natural preservative, keeping these cakes exceptionally moist for longer periods compared to butter-based or biscuit shortcakes, which tend to dry out quickly.

How Long Can You Keep Olive Oil Cake Fresh?

When stored properly in an airtight container at room temperature, olive oil cake can stay wonderfully fresh and moist for up to 4 days. If your kitchen is particularly warm or humid, refrigerating it will extend its freshness, though the texture might firm up slightly. For optimal taste and texture, enjoy within a few days of baking.

Can You Freeze Olive Oil Cake?

Absolutely! Olive oil cake freezes exceptionally well, making it perfect for meal prep or enjoying later. Ensure the cake is completely cooled to room temperature. Wrap individual cake rounds or the entire cake tightly in plastic wrap, then an additional layer of aluminum foil, to prevent freezer burn. It can be frozen for up to 2 months. To defrost, simply transfer the wrapped cake to the refrigerator overnight. Once thawed, it will be as moist and delicious as freshly baked.

What Kind of Olive Oil Should I Use for Baking?

For best results, use a good quality extra virgin olive oil (EVOO) with a mild, fruity flavor profile. Avoid anything too robust or peppery, as it can overpower the delicate flavors of the cake and strawberries. A light or medium-bodied EVOO will contribute a beautiful, subtle essence without being intrusive, enhancing the overall sophistication of the dessert.

Can I Make This Recipe Gluten-Free or Dairy-Free?

While the original recipe calls for all-purpose flour and whole milk, you can certainly experiment with substitutions. For a gluten-free version, use a high-quality 1:1 gluten-free baking flour blend that contains xanthan gum. For a dairy-free option, substitute the whole milk with a neutral-flavored plant-based milk such as almond, oat, or soy milk. The olive oil naturally makes the cake dairy-free, but you would also need to use a dairy-free whipped topping alternative.

Beyond the Classic: Serving Suggestions & Creative Variations

While these Strawberry Shortcakes with Olive Oil Cake are perfect as is, you can always explore different ways to serve them or add your own creative twist:

  • Elegant Pairings: Serve alongside a light, sparkling rosé or a chilled glass of prosecco for a sophisticated brunch or dinner party. For a non-alcoholic option, a delicate herbal tea or a cold brew coffee can perfectly complement the flavors.
  • Seasonal Fruit Swaps: Don’t limit yourself to just strawberries! This olive oil cake base is incredibly versatile. Experiment with other seasonal berries like raspberries, blueberries, or mixed berries. Peaches, nectarines, or even figs can also create stunning variations when in season.
  • Flavor Enhancements for the Cream: Infuse your whipped cream with a touch of vanilla bean paste, almond extract, or even a hint of Grand Marnier or Limoncello for an adult-friendly version. A sprinkle of citrus zest (lemon or orange) can also brighten the overall flavor profile.
  • Individual Servings vs. Larger Cake: While cutting individual rounds is charming, you can also bake the olive oil cake in a larger round or square pan and serve it as a single layer cake topped with berries and cream for a more communal dessert experience.
  • Brunch Star: Present these shortcakes at your next brunch. The lightness of the olive oil cake makes it less heavy than traditional pastries, offering a sweet yet refreshing option.

Ingredients

For the Olive Oil Cake:

  • 1 cup + 1 teaspoon all-purpose flour
  • 1/2 + 1/8 teaspoon baking powder
  • 1/2 + 1/8 teaspoon kosher salt
  • 1 large egg, at room temperature
  • 3/4 cup + 2 teaspoons granulated sugar
  • 1/4 cup + 3 tablespoons whole milk
  • 1/4 cup + 2 tablespoons good quality extra virgin olive oil

For the Strawberries & Whipped Cream:

  • 1 1/2 cups sliced fresh strawberries
  • 2 tablespoons powdered sugar (for strawberries)
  • 1 cup heavy cream, chilled
  • 1-2 tablespoons powdered sugar (for whipped cream, to taste)
  • 1/2 teaspoon vanilla extract (optional, for whipped cream)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Prepare a quarter sheet pan by lining it with a Silpat mat or parchment paper, then lightly spraying it with nonstick spray or olive oil.
  2. In a medium bowl, combine the flour. Sift in the baking powder and kosher salt, then whisk all the dry ingredients together thoroughly to ensure they are well combined.
  3. In the bowl of a stand mixer fitted with the whisk attachment, place the room-temperature egg and granulated sugar. Mix on medium-low speed for approximately one minute to gently combine the ingredients.
  4. Increase the mixer speed to medium and whip the egg and sugar mixture for five minutes. The mixture should become thick, pale yellow, and noticeably increased in volume.
  5. Stop the mixer and scrape down the sides and bottom of the bowl with a spatula. Then, whip on medium-high speed for another five minutes. The mixture should thicken further; when the whisk is lifted, it should form a slowly dissolving ribbon as it falls back into the bowl.
  6. In a separate small bowl, combine the whole milk and olive oil. With the mixer running on medium-low speed, gradually add half of the dry ingredients to the egg mixture, mixing until just combined. Follow with half of the milk and olive oil mixture, continuing to mix until fully incorporated.
  7. Repeat the process with the remaining dry ingredients, followed by the rest of the milk and olive oil mixture, mixing until a smooth batter forms. Be careful not to overmix.
  8. Pour the prepared batter into your lined sheet pan. Using an offset spatula, gently spread the batter into an even layer, ensuring it reaches all corners of the pan for uniform baking.
  9. Bake for approximately 15 minutes, or until a wooden skewer inserted into the center of the cake comes out clean and the cake springs back lightly when gently touched. Transfer the pan to a wire cooling rack and allow the cake to cool completely.
  10. Once cooled, lay a piece of parchment paper on the back of a clean sheet pan or cutting board. Run a knife around the edges of the cake to loosen it, then carefully invert the cake onto the parchment paper.
  11. Gently peel off the Silpat mat or parchment paper from the top (now bottom) of the cake.
  12. For cleaner cuts and easier handling, it is recommended to freeze the cooled cake for about 20-30 minutes before cutting it into shapes. This firms up the cake slightly, making it less prone to tearing.
  13. Using a round cookie cutter or a knife, cut the cake into your desired shortcake rounds or shapes.
  14. To assemble: gently slice your cake rounds in half horizontally. Spread a generous layer of freshly whipped cream on the bottom half of a cake round, then arrange a layer of sliced strawberries over the cream. Spread another layer of whipped cream on the bottom of the top cake half and place it gently over the strawberries. Finally, add another dollop of whipped cream on top of the stacked shortcake and finish with a spoonful of fresh strawberries. Serve immediately.

Notes

This exquisite recipe is an adaptation from the highly regarded Bouchon Bakery cookbook by Thomas Keller, a true testament to exceptional baking.

The baked olive oil cake (unassembled) can be stored at room temperature for up to four hours, refrigerated for up to three days, or frozen for up to two weeks when properly wrapped. Assembled shortcakes are best enjoyed fresh.

Always ensure your baking powder is fresh for optimal cake rise and texture; test it with hot water if unsure.

For the best flavor, macerate your sliced strawberries with a tablespoon or two of sugar for about 15-20 minutes before assembling. This draws out their juices and sweetens them beautifully.
