  • 2 tablespoons fresh lime juice, divided

  • 2 cups chopped rotisserie chicken (or any cooked chicken)
  • 1/4 cup mayonnaise (full-fat for keto)
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon chipotle powder
  • 1/2 cup diced tomatoes
  • 2 tablespoons shredded cheddar cheese, optional, for topping

Instructions

  1. Carefully cut each avocado in half lengthwise and remove the pit. Using a spoon, gently scoop out some of the avocado flesh from each half, leaving approximately a 1/2-inch-thick wall inside the skin. This creates a perfect bowl for your chicken salad.
  2. Brush the cut surfaces of each avocado half with half of the fresh lime juice. This helps prevent browning and adds a bright flavor. Lightly sprinkle the avocado halves with salt and pepper.
  3. In a medium-sized mixing bowl, combine the chopped chicken, mayonnaise, the remaining lime juice, fresh cilantro, and chipotle powder. Mix everything until all ingredients are well combined and the chicken is coated evenly. Season with salt and pepper to taste, adjusting to your preference.
  4. Gently fold in the diced tomatoes. Be careful not to mash the tomatoes, preserving their texture.
  5. Divide the flavorful chicken salad mixture evenly among the prepared avocado halves. If desired, sprinkle each stuffed avocado with shredded cheddar cheese before serving. Serve immediately and enjoy!
