Ingredients
For the Chocolate Cake:
- 5 ounces semisweet chocolate (chopped)
- 1 ½ cups very hot coffee
- 3 cups granulated sugar
- 2 ½ cups all-purpose flour
- 1 ½ cups unsweetened cocoa powder (sifted)
- 2 teaspoons baking soda
- ¾ teaspoon baking powder
- ½ teaspoon salt
- 3 whole large eggs and 1 extra large egg yolk (at room temperature)
- ¾ cup canola oil (or other neutral vegetable oil)
- 1 ½ cups buttermilk
- 1 teaspoon pure vanilla extract
For the White Chocolate Ganache Filling:
- 12 ounces white chocolate (high quality, chopped)
- ½ cup heavy cream
For the Rich Chocolate Buttercream Frosting:
- 10 ounces semisweet chocolate, chopped
- 1 ½ cups (3 sticks) unsalted butter, softened to room temperature

Instructions
- Prepare the Cake Layers: Preheat your oven to 325ºF (160ºC). Generously coat three 8 or 9-inch round cake pans with non-stick baking spray, then line the bottoms of the pans with parchment paper rounds. This recipe is designed for two layers, so you will have one extra layer to save or enjoy later.
- Infuse the Chocolate: In a medium-sized heatproof bowl, combine the very hot coffee with the chopped semisweet chocolate. Let it sit undisturbed for 5 minutes to allow the chocolate to melt. Whisk gently until the chocolate is fully melted and the mixture is smooth. Set aside to cool slightly.
- Cream Eggs and Sugar: In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), combine the 3 whole eggs, 1 extra egg yolk, and granulated sugar. Beat on medium-high speed until the mixture is light, pale yellow, and fluffy, which should take approximately 3 minutes.
- Add Wet Ingredients: To the egg mixture, add the canola oil, buttermilk, and vanilla extract. Beat on low speed until all ingredients are just combined and smooth.
- Combine Dry and Wet: In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients in the stand mixer. Beat on low speed until just combined. Finally, pour in the cooled chocolate-coffee mixture and mix until it is fully incorporated into the batter, being careful not to overmix.
- Bake the Cakes: Divide the prepared batter evenly among the three lined cake pans. Bake in the center of the preheated oven for 40-45 minutes, or until a wooden toothpick inserted into the center of a cake comes out clean or with a few moist crumbs.
- Cool Completely: Remove the baked cakes from the oven and place them on a wire cooling rack. Let them cool in the pans for about 10 minutes before carefully inverting them onto the rack to cool completely. This prevents the cakes from sticking or tearing.
- Prepare for Assembly: Once completely cool, carefully peel off the parchment paper from the bottom of each cake layer. Select two of the most even layers for your cake. Wrap the third layer tightly in plastic wrap and aluminum foil, then freeze it to use for another cake or enjoy later. (If you prefer a three-layer cake, you will need to adjust the quantities for the ganache and frosting).
- Make the White Chocolate Ganache Filling: In a microwave-safe bowl, combine the chopped white chocolate and heavy cream. Microwave in 30-second increments, stirring well after each interval, until the white chocolate is completely melted and the mixture is smooth and glossy. Refrigerate the ganache mixture until it is cool and has thickened to a spreadable consistency. It should not be hard, but firm enough not to run down the sides when assembled.
- Prepare the Chocolate Buttercream Frosting: Place the chopped semisweet chocolate in a microwave-safe bowl. Microwave, stirring frequently, until the chocolate is fully melted and smooth. Let the melted chocolate cool until it is lukewarm, stirring occasionally to prevent it from setting.
- Whip the Buttercream: In a large mixing bowl (or the bowl of your stand mixer with the paddle attachment), beat the room temperature butter until it is smooth and creamy. Gradually sift the powdered sugar over the butter and beat until well blended and light, about 2 minutes. Beat in the vanilla extract. Finally, add the lukewarm melted chocolate and beat until the frosting is smooth, light, and well blended, scraping down the sides of the bowl as needed.
- Assemble and Frost: Place one cooled cake layer on your serving plate or cake stand. Spread an even, thick layer of the chilled white chocolate ganache over the top.
