Ingredients

Crust:

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • 1 stick plus 1 tablespoon (9 tablespoons) very cold (or frozen) unsalted butter, cut into small pieces
  • 1 large egg yolk

Filling:

  • 2 packages (16 ounces) cream cheese at room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Topping:

  • ½ pint blueberries
  • 16 ounces fresh strawberries
  • ½ cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. To make the crust, combine the flour, powdered sugar, and salt in a food processor and pulse briefly until just combined.
  2. Add the very cold or frozen butter pieces to the food processor and pulse until the mixture resembles coarse cornmeal with some pea-sized chunks of butter remaining.
  3. Whisk the egg yolk lightly, then add it to the food processor a little at a time, pulsing after each addition. Continue pulsing with longer, 10-second bursts until the mixture starts to come together into a dough.
  4. Turn the dough out onto a lightly floured work surface. Gently knead the dough a few times until any remaining dry flour is incorporated and the dough forms a cohesive ball.
