Her enthusiasm was infectious, and her subtle hints soon turned into a loving challenge: “Mom, you just HAVE to bake these!” And so, the journey to create these beautiful cookies began.


Initially, I pondered using a brighter pink food gel to transform them into “Pink Velvet Cookies.” However, the touch of cocoa powder in the classic red velvet recipe, essential for its distinct flavor, would inevitably soften the pink hue, resulting in a more muted, less vibrant color. So, instead of fighting the natural outcome, we embraced the gorgeous, intense dark pink that emerged from the oven. For those who caught a sneak peek on my social media a few weeks ago, you’ll agree that these cookies boast a shade so vivid and deep, they could easily convince anyone they were indeed a perfectly planned “pink.” Katie, my toughest critic and most cherished fan, gave these her absolute seal of approval. She even shared a photo on her own social media, which, coming from a teenager, is the ultimate compliment and a testament to their irresistible appeal.

It is a journey fraught with challenges, yet it is also a testament to the human spirit’s capacity for hope and endurance. The emotional toll, the physical demands of treatment, and the uncertainty are burdens no one should have to bear alone.


I recall vividly the stories of courage and the unwavering support systems that surrounded my patients. My own brother-in-law stands as one of the inspiring success stories. He endured a near-death experience during his induction chemotherapy for leukemia and subsequently underwent a stem cell transplant. His remarkable recovery is a beacon of hope and a powerful reminder of the advancements in medical science. The survival rates for many cancers have dramatically improved since my days as a hematology-oncology RN. Yet, despite these incredible strides, our ultimate goal remains elusive: a complete cure. We are not there yet, and until we are, every effort, every conversation, every pink ribbon, and yes, every delicious cookie shared in solidarity, moves us closer to that reality. Our collective voice and actions truly make a difference, urging continued research, advocating for early detection, and providing comfort to those on their journey.

The Recipe:

Red Velvet White Chocolate Chunk Cookies….for Breast Cancer Awareness~

Ingredients

Adapted from Cooking Classy

  • 2 1/4 cups all-purpose flour
  • 2 1/2 tablespoons cocoa powder
  • 1 1/2 teaspoons cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoons salt
  • 8 tablespoons butter (at room temperature)
  • 5 tablespoons shortening
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 tablespoons white vinegar
  • 1 1/2 teaspoons vanilla
  • 1 tablespoons red food coloring
  • 8 ounces white chocolate (chopped into chip sized pieces, divided)

Instructions

  1. Preheat oven to 350ºF (175ºC). Line cookie sheets with parchment paper and set aside.
  2. In a mixing bowl, whisk together flour, cocoa powder, cornstarch, baking soda, and salt, and set aside. In a separate large bowl, beat butter, shortening, and sugar until very pale and fluffy. Add the egg and egg yolk, mixing until just combined. Incorporate the vinegar, vanilla extract, and red food coloring, mixing until the mixture is well blended and vibrant. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined to avoid overworking the dough. Gently fold in 3/4 cup of the white chocolate chunks.
  3. Scoop the dough out by rounded tablespoonfuls, rolling them into smooth balls. Place the cookie dough balls about 2 inches apart on the prepared cookie sheets. Gently press a few of the remaining white chocolate chunks onto the top of each cookie for a beautiful finish. If needed, gently reshape the dough balls after adding the chocolate.
  4. Bake for 12-13 minutes, or until the edges are lightly set but the centers still look soft. Allow the cookies to cool on the baking sheets for several minutes before carefully transferring them to a wire rack to cool completely.
