Vanilla Buttercream Topped Cocoa Cupcakes Recipe

Ingredients

Cupcakes:

  • ½ cup cocoa powder (not Dutch-processed)
  • ¾ cup flour
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs, at room temperature
  • ½ cup sugar
  • ½ cup brown sugar
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon coffee extract (may add more vanilla if you don’t have coffee extract)
  • ½ cup buttermilk, at room temperature

Vanilla Buttercream:

  • 1 cup butter (2 sticks), at room temperature
  • 4 ½-5 cups powdered sugar
  • ¼ cup heavy cream
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350ºF (175ºC).
  2. This recipe makes approximately 14 cupcakes. Line two muffin tins with 14 liners or line one muffin tin with 12 liners and two ramekins with liners. Set aside.
  3. Make the cupcakes: Whisk the cocoa powder, flour, baking soda, baking powder, and salt in a medium bowl until thoroughly combined. Set aside.
  4. In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, vanilla extract, and coffee extract (if using).
  5. Gradually incorporate the dry ingredients into the egg mixture: Whisk in about ⅓ of the dry ingredients, then half of the buttermilk. Follow with another ⅓ of the flour mixture, then the remaining buttermilk, and finally, the rest of the flour mixture.
  6. Ensure you whisk gently after each addition, but be careful not to overmix the batter.
  7. Fill paper liners only about ½ full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Cool the cupcakes in the muffin tins for about 10 minutes, then carefully remove them to a wire rack to cool completely.
  9. To make the frosting: In a stand mixer fitted with the paddle attachment, or using a hand mixer, beat the room temperature butter until it is light and fluffy.
  10. With the mixer running on low speed, gradually add 4 ½ cups of powdered sugar, the heavy cream, and vanilla extract until just combined.
  11. Increase the mixer’s speed to high and beat for a couple more minutes until the frosting is smooth and airy. Adjust the texture as needed by adding up to another ½ cup of powdered sugar for a thicker consistency, or a touch more cream to thin it out.
  12. Once the cupcakes are completely cooled, frost them as desired. You can pipe elegant swirls for a decorative touch or simply spread a generous amount of frosting onto the tops with a knife for a more rustic look.
