The Irresistible Allure of Raspberry Crumb Bars

There’s something inherently comforting and utterly irresistible about a perfectly baked crumb bar, and these raspberry versions are no exception. Imagine a tender, buttery shortbread crust, offering a foundational richness that perfectly cradles a vibrant, fruity filling. Layered on top is a generous spread of sweet and tangy raspberry jam, bursting with the authentic flavor of fresh berries. Finally, the crowning glory: a thick, golden-brown streusel topping, providing a delightful textural contrast with its crisp, buttery crumbs. Each bite is a symphony of flavors and textures, making these bars a truly unforgettable dessert experience.

My journey with these exceptional raspberry bars began when I stumbled upon a fantastic recipe from my dear friend Danielle’s blog, Hugs & Cookies XOXO. The image of those generously crumbled tops immediately caught my eye, promising a dessert that was as visually appealing as it was delicious. Knowing my husband Bill’s fondness for raspberries, I knew these gems would be an instant hit in our home. And indeed, they were!

Beyond just satisfying cravings, baking often creates wonderful memories. I recently had the pleasure of baking these Raspberry Crumb Bars when my delightful mother-in-law was visiting. Her visit always brings warmth and laughter, and I always aim to make her stay extra special with homemade treats. She’s a remarkable lady, full of fascinating stories from her days owning a pharmacy in small-town Illinois with my father-in-law. We spent evenings around the dinner table, sharing stories and catching up, creating new cherished moments. It was a joy to see her and Bill both rave about these bars, their smiles a testament to the simple pleasure of good food shared with loved ones. Baking these bars became a sweet part of our family’s narrative, proving that some recipes are more than just food; they’re an experience.

Why Raspberries Make These Bars Shine

The star of this recipe is undoubtedly the raspberry. These little jewels of nature bring a bright, tart counterpoint to the rich, buttery elements of the crust and streusel. Their vibrant color makes the bars visually stunning, while their distinct flavor provides a refreshing burst with every bite. Using a high-quality seedless raspberry jam ensures a smooth, intensely fruity layer that melts harmoniously into the surrounding crumbly goodness. Raspberries are also known for their numerous health benefits, being packed with antioxidants, vitamins, and fiber, adding a subtle touch of wellness to this indulgent treat. This perfect balance of indulgence and natural goodness is what truly elevates these crumb bars.

Amazing raspberry cookie bars with a thick, heavenly streusel topping, perfect for any occasion!

Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup plus 3 tablespoons powdered sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened to room temperature

For the Filling:

  • 1/2 cup plus 2 tablespoons seedless raspberry jam (high quality is recommended)

For the Crumb Topping:

  • 1 1/2 cups packed light brown sugar
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour

To Serve (Optional):

  • Powdered sugar, for dusting

Instructions

  1. Prepare Your Pan: Line a 9×13 inch baking pan with nonstick foil or spray it generously with non-stick cooking spray. This will ensure easy removal of your bars. Set the prepared pan aside. Preheat your oven to 350ºF (175ºC).
  2. Make the Crust: In a medium bowl, using a handheld mixer or stand mixer, blend all the crust ingredients (flour, powdered sugar, and 3/4 cup butter) until they are well combined and form a cohesive dough. Press this dough evenly into the bottom of your prepared 9×13 inch pan. Bake for 15-20 minutes, or until the crust is lightly golden around the edges. Remove from the oven and set aside to cool for approximately 40 minutes. This cooling period is crucial before adding the jam.
  3. Add the Raspberry Filling: Once the crust has cooled sufficiently, spread the seedless raspberry jam evenly over the entire surface of the crust. Ensure a consistent layer from edge to edge.
  4. Prepare the Crumb Topping: In a separate mixing bowl, using a mixer, cream together the 1 cup of softened butter and the brown sugar until they are light and fluffy. Mix in the vanilla extract, then gradually add the 2 1/4 cups of flour, mixing just until the flour is incorporated and a crumbly mixture forms. Be careful not to overmix.
  5. Assemble the Bars: Using your hands, pinch generous pieces of the crumb topping mixture to create large crumbs. Evenly sprinkle these crumbs over the raspberry jam layer. It might seem like a lot of topping, but trust the process – use all of it for that heavenly streusel layer!
  6. Final Bake and Serve: Place the pan back into the preheated oven and bake for another 25-30 minutes, or until the crumb topping is beautifully golden brown. Once baked, remove the bars from the oven and allow them to cool completely in the pan on a wire rack before cutting. Cooling completely prevents the bars from crumbling apart when sliced. If desired, lightly dust with powdered sugar just before serving for an extra touch of elegance.

Notes and Pro Tips

For the best texture and flavor, always ensure your butter is at true room temperature for both the crust and the crumb topping. This allows for easier blending and a more consistent dough.

When making the crumb topping, avoid overmixing. You want distinct crumbs, not a smooth dough. A light touch will ensure that perfect streusel texture.

Storage: These Raspberry Crumb Bars can be stored at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week.

Freezing Instructions: These bars freeze beautifully! Once completely cooled, cut them into individual servings. Wrap each bar tightly in plastic wrap, then place them in a freezer-safe bag or container for up to 3 months. If freezing, do not sprinkle with powdered sugar until after they have been defrosted. Thaw at room temperature or in the refrigerator before serving.

Flavor Variations: Feel free to experiment with other jam flavors! Apricot, strawberry, blueberry, or even a mixed berry jam would be delicious alternatives. You could also add a pinch of cinnamon or nutmeg to the streusel for a warmer spice note, or finely chopped nuts like pecans or walnuts for extra crunch.
