Why These Almond Raspberry Tartlets Will Steal the Show
In a world full of elaborate holiday baking, sometimes the most cherished treats are those that combine simplicity with undeniable flavor and charm. These almond raspberry tartlets tick all the boxes, offering numerous reasons why they should be at the top of your holiday baking list:
- Perfectly Portioned Pleasure: Forget the guilt of a large slice of pie! Baked in a mini muffin pan, these tartlets offer a wonderful individual dessert experience. They are just enough to satisfy that sweet craving without overindulging, making them ideal for parties and gatherings where variety is key.
- Elegant Presentation, Effortless Execution: Despite their sophisticated appearance, these tartlets are surprisingly straightforward to make. Their charming size and the beautiful trio of sliced almonds on top make them look like they took hours, but the process is manageable even for busy holiday bakers.
- Versatile Holiday Gifts: Beyond being a delightful addition to your own dessert spread, these mini tarts make fantastic hostess gifts or thoughtful holiday presents for friends, family, and neighbors. Package them in small decorative boxes or tins, and you have a homemade gift that truly speaks from the heart.
- A Symphony of Flavors: The combination of tart raspberry jam with the sweet, nutty almond paste is a match made in heaven. Encased in a tender, slightly tangy cream cheese crust, each ingredient plays its part in creating a harmonious and unforgettable taste experience.
- Make-Ahead Friendly: The dough can be prepared in advance and chilled, making holiday baking less stressful. You can even bake the tartlets a day or two ahead and store them, allowing you to enjoy the festivities without last-minute kitchen dashes.
During the busy holiday season, I often find myself immersed in baking marathons, with countertops adorned with flour, sugar, and crumbs from an array of treats—ginger snaps, butterscotch cookies, peanut butter blossoms, cherry chocolate chunk cookies, snowballs, peppermint bark, fudge, and English toffee. It’s a sweet chaos! But even when my kitchen feels like a pastry battlefield, I always find renewed energy for a recipe that promises delicious results with minimal fuss. That’s precisely why these almond raspberry tartlets became a winning recipe in my repertoire – a simple, yet utterly delightful creation that stands out amongst the holiday hustle.
The Magic Ingredients Behind These Delicious Tartlets
Creating something truly special often comes down to the quality and proper preparation of your ingredients. For these almond raspberry tartlets, a few key components work in harmony to produce their unique flavor and texture:
- All-Purpose Flour & Granulated Sugar: Essential kitchen staples that form the backbone of both the crust and the filling. Using good quality flour ensures the right texture for your pastry.
- Unsalted Butter (Room Temperature): Butter is crucial for a rich, flaky, and tender crust. Bringing it to room temperature is vital for easy incorporation with the cream cheese, ensuring a smooth, uniform dough without overworking it. This prevents a tough crust.
- Cream Cheese (Room Temperature): The secret to our incredibly tender and slightly tangy crust! Room temperature cream cheese blends seamlessly with the butter, creating a dough that is both pliable and wonderfully flavorful. It adds a subtle richness that complements the fruit and almond notes beautifully.
- Raspberry Jam or Preserves: The star of the filling! I highly recommend using a high-quality raspberry jam, such as Bonne Maman Raspberry Preserves, for its vibrant flavor and consistency. For the best experience, opt for a jam with fewer large fruit pieces or gently press it through a sieve if you prefer a smoother texture. The tartness of the raspberries cuts through the sweetness of the almond paste, creating a perfect balance.
- Almond Paste (Crumbled): This is what gives the tartlets their distinctive, rich almond flavor and delightful chewiness. Almond paste is a mixture of ground almonds and sugar, offering a denser, more intensely almond flavor than frangipane. Crumbling it helps it to mix evenly into the filling.
- Large Egg: Binds the almond paste filling, giving it structure and a slightly custardy texture when baked.
- Sliced Almonds: Not just for garnish! A trio of sliced almonds on top adds a lovely visual appeal and a delicate crunch, enhancing the overall texture and presentation of the tartlets.

Crafting Your Tartlets: A Step-by-Step Guide to Perfection
These delightful tartlets are a joy to make, and the process is straightforward, ensuring you can create a professional-looking dessert right in your home kitchen. This recipe was shared by my dear friend Kathy, an exceptional home baker, so you know it’s tried and true!
- Prepare the Cream Cheese Dough: Begin by beating together the softened butter and cream cheese until light and fluffy. This ensures a smooth, uniform base for your crust. Gradually incorporate the flour until a cohesive dough forms. The dough will be tender and pliable. Cover it and chill for at least an hour. This crucial step helps the butter firm up, preventing the dough from shrinking during baking and making it easier to handle.
- Form the Tartlet Crusts: Once chilled, divide the dough into small, 1-inch balls. Lightly press each ball into the bottom and up the sides of an ungreased mini muffin tin. The cream cheese in the dough helps prevent sticking, but you can lightly grease the pan if you prefer. For efficiency and perfectly shaped crusts, I highly recommend using a wooden tassie tamper. This handy tool makes quick work of forming the crusts, ensuring consistent thickness and shape across all your tartlets.
- Fill with Raspberry Jam: Spoon approximately half a teaspoon of your chosen raspberry jam into the bottom of each prepared pastry crust. Be mindful not to overfill, as the almond paste layer will go on top. The vibrant red of the jam peeking through will be visually appealing.
- Create the Almond Paste Filling: In a separate bowl, beat together the egg, sugar, and crumbled almond paste until well combined. The mixture should be smooth but retain the characteristic texture of almond paste. This creates a rich, sweet, and nutty layer that perfectly complements the tart raspberry.
- Top and Garnish: Carefully spoon one level teaspoon of the almond paste mixture over the raspberry jam in each tartlet. Using your finger or a small offset spatula, gently smooth the tops to ensure an even layer. Finally, artfully arrange a trio of sliced almonds on top of each tartlet. This not only adds a beautiful decorative touch but also provides a pleasant crunch.
- Bake to Golden Perfection: Preheat your oven to 325ºF (160ºC). Bake the tartlets for 25-30 minutes, or until the crusts are golden brown and the almond paste filling is set and slightly puffed. The aroma filling your kitchen will be absolutely heavenly!
- Cool and Serve: Once baked, allow the tartlets to cool completely on a wire rack before attempting to remove them from the muffin tin. This prevents breakage and ensures they hold their shape. These babies are truly amazing—tender, with the heavenly flavors of raspberry jam and almond paste harmonizing beautifully.

Frequently Asked Questions About Tarts and Tartlets
While often confused, tarts and pies have distinct characteristics. A tart typically features a pastry crust with shallow, often straight sides, and can hold either a sweet or savory filling. Tarts are usually baked without a top crust, showcasing their beautiful fillings. Pies, on the other hand, generally have angled sides and can be baked with or without a top crust. Tartlets are simply bite-sized, individual versions of a larger tart, perfect for single servings.
These three almond-based ingredients are often confused but serve different purposes in baking. Almond paste is a dense, dough-like mixture primarily made from finely ground almonds and sugar, often with a small amount of liquid or egg white. It’s typically sold in cans or tubes and has a rich, concentrated almond flavor, making it ideal for fillings. Marzipan is a sweeter, more refined version of almond paste, often made with additional sugar and sometimes egg whites, giving it a smoother, more pliable consistency. It’s commonly molded into decorative shapes (like fruits) or used as a confectionery coating. Frangipane is an almond-flavored custard or cream used as a pastry filling. It’s made by combining ground almonds with butter, sugar, and eggs, resulting in a softer, more cake-like texture when baked, often spread over tart crusts before baking.
Absolutely! These almond raspberry tartlets are excellent for make-ahead preparation. You can prepare the dough and chill it for up to 2-3 days in the refrigerator, or freeze it for longer storage. Once baked, the tartlets can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week. They also freeze beautifully for up to a month; simply thaw at room temperature before serving.
While raspberry jam offers a classic pairing with almond, feel free to experiment with other fruit preserves! Apricot jam provides a lovely sweet-tart contrast, cherry jam offers a deeper, richer fruit flavor, and even blackberry or peach preserves would be delicious. Choose a high-quality jam that you enjoy to ensure the best results.
