Instructions
- Preheat the oven to 350ºF (175ºC). Grease 3 9-inch cake pans (I used the ones in the checkerboard cake kit). Line bottoms with parchment paper and grease the top of the parchment. Set aside.
- Prepare the red velvet cake batter.
- In a medium bowl, combine the flour, cocoa, baking soda, baking powder, and salt. Whisk thoroughly to combine. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, beat granulated sugar and butter at medium speed for 4 minutes or until well blended and creamy.
- Add egg whites to the sugar mixture; beat at medium speed for 5 minutes or until the mixture is light and fluffy.
- In a small bowl, combine buttermilk, red food coloring, and vanilla. Stir well with a whisk.
- With the mixer on medium speed, gradually add one-third of the flour mixture, then half of the buttermilk mixture, followed by another third of the flour mixture, and then the rest of the buttermilk mixture.
