- 2 cups sweetened shredded coconut
Instructions
- Preheat the oven to 350 degrees F (175 C). Grease two 9-inch cake pans with non-stick flour and oil baking spray (like Baker’s Joy) and line the bottom of each pan with parchment paper. Spray the top of the parchment as well.
- To prepare the cake batter, first, in a medium bowl, whisk together the cake flour, baking powder, and salt. In a separate small bowl, whisk together the buttermilk and egg whites.
