Why This Flourless Chocolate Cake is a Must-Try
There are countless reasons to add this La Bete Noire to your baking repertoire, but a few stand out, making it an absolute essential for any dessert enthusiast:
- Unrivaled Chocolate Intensity: With a staggering 18 ounces of premium semisweet chocolate infused into both the cake and its luxurious ganache topping, this recipe delivers an extraordinary chocolate experience. It’s a true celebration for chocoholics, offering a double dose of deep, complex flavor.
- The Ultimate Special Occasion Dessert: This isn’t just an everyday treat. Its elegant appearance and sophisticated taste make it the ideal choice for dinner parties, holidays, birthdays, or any gathering where you want to leave a lasting impression. It consistently serves as my go-to recipe for entertaining, ensuring every guest feels indulged.
- A Trusted and Proven Recipe: When friends seek a reliable, foolproof dessert that’s been tested and perfected over time, this is the recipe I confidently share. Its consistent success and ease of execution (despite its gourmet appearance) make it a beloved classic.
- Exquisite Texture Beyond Compare: Unlike many traditional flourless chocolate cakes, our La Bete Noire begins with a unique hot simple syrup, which is carefully folded into the melted butter and chocolate before the eggs are added. This innovative step is the secret to its truly exquisite texture – a smooth, creamy, and wonderfully dense consistency that melts in your mouth, distinguishing it from all others.
Prepare to fall in love with a cake that redefines decadence and becomes your new favorite “black beast” in the kitchen.
Essential Ingredients for Your La Bete Noire
Crafting this magnificent Flourless Chocolate Cake starts with selecting the right ingredients. While many staples like Sugar, Butter, and Eggs are likely already in your pantry, a few key items warrant special attention to ensure your La Bete Noire reaches its full potential. Quality ingredients are paramount for a dessert of this caliber.
- Premium Semisweet Chocolate: The heart of this cake lies in its chocolate. For superior taste and texture, I strongly recommend using high-quality chocolate bars rather than chocolate chips. Bars typically contain a higher percentage of cocoa butter, which melts more smoothly and contributes to a richer, more luxurious consistency. My personal preference is Ghirardelli semisweet chocolate bars, which I always keep on hand for such indulgent baking endeavors. Feel free to use your favorite brand, but prioritize quality for an unforgettable result.
- Rich Heavy Cream (36-40% Fat): This ingredient is crucial for creating the luscious ganache topping that blankets our Black Beast. The high fat content of heavy cream (also known as whipping cream) is essential for achieving that delightful richness and smooth, glossy finish. It also forms the perfect base for sweetened whipped cream, an ideal garnish that beautifully complements the dense chocolate cake.
- Garnish Options: While the cake is divine on its own, thoughtful garnishes elevate the presentation and add contrasting textures. Consider a dollop of freshly Whipped Cream (sweetened lightly), delicate Shaved Chocolate (easily made with a vegetable peeler from a chocolate bar), and/or vibrant fresh Berries like raspberries or strawberries. These additions not only enhance the visual appeal but also provide a refreshing counterpoint to the cake’s intense richness.
Gathering these high-quality components is the first step toward baking a La Bete Noire that truly lives up to its legendary reputation.

Mastering La Bete Noire: Expert Tips for Perfection
The name, “La Bete Noire,” is French for “the black beast,” a phrase that historically referred to an insufferable person or adversary. However, in the culinary world, it has been delightfully reappropriated to describe this rich, dense, and utterly irresistible Flourless Chocolate Cake. It’s a beastly delicious dessert, indeed! To ensure your La Bete Noire is nothing short of perfection, here are some invaluable expert tips:
- The Uniqueness of Sugar Syrup: What sets this La Bete Noire apart from many other flourless chocolate cakes is the incorporation of a simple sugar syrup as a primary sweetener. This isn’t just for sweetness; it plays a critical role in developing the cake’s signature custardy, incredibly smooth texture. To make it, simply simmer sugar and water until the sugar fully dissolves, then continue to gently simmer for the specified time. This method ensures uniform sweetness and moisture throughout the cake.
- PRO-Tip for Melting Chocolate: Mastering the Microwave. While a double boiler is always a safe bet, the microwave can be your best friend for melting chocolate and butter, provided you use it correctly. The key is gentle, controlled heat. Always decrease the power to 50% or even lower, and melt in very short bursts—start with 30 seconds, then stir, and continue with 10-15 second intervals. Stop when there are still a few tiny, unmelted pieces of chocolate visible. The residual heat from the melted chocolate will finish the job as you stir, preventing overheating, which can cause the chocolate to seize or become grainy. Patience here yields perfectly smooth chocolate.
- The Importance of a Springform Pan: This cake, like many cheesecakes, is designed to be baked in a springform pan with removable sides. This specialized pan is essential for easy release of the delicate, dense cake, allowing you to present it flawlessly without risking damage. Ensure your springform pan is in good condition with a tight seal.
- Baking in a Water Bath (Bain-Marie): La Bete Noire benefits immensely from being baked in a water bath. This technique creates a moist, consistent baking environment in the oven, which prevents the cake from drying out or cracking. The gentle, even heat from the water bath ensures a tender, creamy texture from edge to center. PRO-Tip: To prevent any water from seeping into your delicate cake batter, meticulously wrap the outside of your springform pan with at least three layers of heavy-duty aluminum foil, extending it well above the rim. This creates an impermeable barrier against the hot water.
- Cooling and Chilling for Optimal Texture: After baking, allow the cake to cool completely in its pan on a wire rack before attempting to add the ganache. Once ganache is applied, refrigerate the cake for a minimum of 2 hours, or ideally longer, until the ganache is fully set and firm. This chilling period is crucial for the cake to firm up, develop its full flavor, and achieve that perfect dense, fudgy consistency that distinguishes a true La Bete Noire.
- Elegant Garnishes and Serving Suggestions: Elevate your presentation with simple yet sophisticated garnishes. A dollop of lightly sweetened whipped cream offers a delightful creamy contrast to the dense chocolate. Fresh berries, such as raspberries or strawberries, add a burst of color and a touch of tartness that beautifully cuts through the richness. For an extra touch of chocolate, use a vegetable peeler to create delicate chocolate shavings from a high-quality chocolate bar. Remember, a little more chocolate never hurts! Serve at room temperature to best appreciate its silky texture. Bon appetit!

Frequently Asked Questions About La Bete Noire
The sugar syrup is a unique and vital component that sets this La Bete Noire apart. It’s incorporated into the melted chocolate and butter before the eggs, contributing significantly to the cake’s incredibly smooth, dense, and “custard-type” texture. This method ensures a moist and tender crumb that is distinct from flourless cakes made with granulated sugar directly added to the batter.
A water bath, or bain-marie, is essential for baking La Bete Noire because it creates a gentle, humid environment in the oven. The steam produced helps the cake bake at a more consistent and lower temperature, preventing the edges from overcooking or drying out before the center is set. This results in an exceptionally moist, tender, and crack-free cake with the desired velvety texture, akin to a rich custard.
For the best experience, this rich dessert requires proper chilling and serving temperature. First, it should chill in the refrigerator for at least 4 hours to allow the cake to fully set and the ganache to firm up. However, to enhance its unparalleled silkiness and flavor, remove it from the refrigerator about 1.5 to 2 hours before serving. Serve each slice of this super-rich dessert with a dollop of freshly whipped cream and a scattering of fresh berries. The light, airy cream and the bright, tart fruit provide a wonderful contrast to the dense, intense chocolate cake, balancing the indulgence perfectly.
Achieving clean, elegant slices of this dense Flourless Chocolate Cake is easy with a simple trick: use a hot knife. To do this, dip a very sharp, thin-bladed knife into very hot water, then wipe it completely dry. The hot blade will glide smoothly through the cake, creating a perfect cut without dragging or tearing. For subsequent slices, wipe the knife clean and repeat the dipping and drying process as needed to maintain pristine presentation.
Absolutely! Semisweet and bittersweet chocolates are largely interchangeable in most recipes, especially in rich chocolate desserts like La Bete Noire. Bittersweet chocolate contains a higher percentage of cocoa solids and less sugar, resulting in a more intense and less sweet chocolate flavor. If you are a true dark chocolate aficionado and prefer a dessert with a deeper, more pronounced cocoa note, using bittersweet chocolate in this recipe will yield a wonderfully sophisticated and less sweet “Black Beast.”

A dense, luscious flourless chocolate cake adapted from Bon Appetit.
Ingredients
For cake:
- 1 cup water
- ¾ cup sugar
- 9 tablespoons (1 stick plus 1 tablespoon) butter, diced
- 18 ounces semisweet chocolate, chopped
- 6 eggs
Ganache:
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
Garnishes:
- Sweetened whipped cream, shaved chocolate and/or fresh berries
Instructions
- Preheat the oven to 350°F (175°C).
- Butter a 10-inch springform pan. Line the bottom of the pan with a parchment round; butter the parchment.
- Wrap 3 layers of heavy-duty foil around the outside of the pan, bringing it up to the top of the rim.
- Combine 1 cup of water and ¾ cup sugar in a small saucepan and bring to a boil over medium heat. Stir until sugar dissolves, then simmer for 5 minutes. Remove from heat.
- Gently melt the 9 tablespoons of butter and the 18 ounces of chocolate in the microwave (or double boiler). Whisk until smooth. Whisk the cooled sugar syrup into the chocolate mixture until well combined.
- Add the 6 eggs to the chocolate mixture and whisk until well blended and uniform. Pour the batter into the prepared springform pan. Place the cake pan in a large roasting pan. Add enough hot water to the roasting pan to come halfway up the sides of the cake pan.
- Bake the cake until the center is just set, about 50 minutes. It should still have a slight jiggle. Remove the springform pan from the water bath; transfer to a rack. Cool completely in the pan.
For ganache:
- Heat 1 cup heavy cream in the microwave until hot. Remove and add 8 ounces chopped chocolate. Let stand for 1 minute, then whisk until smooth. Pour over the top of the cooled cake while it is still in the springform pan. Gently shake the pan to distribute the ganache evenly.
- Refrigerate the cake in its pan until the ganache is set, about 2 hours or longer.
- Carefully run a thin, hot knife around the pan sides to loosen the cake; release the sides of the springform pan.
- Serve wedges at room temperature with sweetened whipped cream and fresh berries or shaved chocolate.
Notes
For the best results and a truly decadent taste, always use good quality chocolate bars, not chocolate chips. Chocolate chips contain stabilizers that can affect the smooth texture of the cake. Ghirardelli Semisweet Chocolate Bars are an excellent choice and are widely available in most grocery stores.
