  1. Prepare Oven: Preheat your oven to 350ºF (175ºC). Line two large baking sheets with parchment paper for easy release and cleanup.
  2. Melt Chocolate & Butter: In a microwave-safe bowl, combine the chopped unsweetened chocolate and butter. Heat in the microwave for 60 seconds, then stir. Continue heating in 30-second increments, stirring after each, until the mixture is completely smooth and melted. Be careful not to overheat.
  3. Combine Wet Ingredients: Add the granulated sugar to the melted chocolate mixture and mix well with a wooden spoon until fully incorporated. Beat in the large eggs one at a time until just combined, then stir in the vanilla extract.
  4. Add Dry Ingredients & Chips: Gradually add the all-purpose flour to the wet ingredients, mixing with the wooden spoon until just incorporated. Be careful not to overmix. Fold in the semi-sweet chocolate chips until they are evenly distributed throughout the dough.
  5. Chill Dough (if needed): If your dough appears too soft or runny, allow it to sit at room temperature for a few minutes (5-10 minutes) until it slightly firms up and is easier to scoop.
  6. Scoop & Bake: Drop the dough by rounded tablespoons (using a cookie scoop is ideal) onto the prepared parchment-lined cookie sheets, leaving about 2 inches between each cookie. Bake for approximately 10 minutes. The centers of the cookies should still look slightly soft or underbaked when you remove them from the oven.
  7. Garnish with M&Ms: Immediately after taking the cookies out of the oven, while they are still hot, carefully press 3-5 reserved M&Ms onto the top of each cookie to garnish. This ensures the M&Ms adhere nicely and retain their vibrant, uncracked appearance.
  8. Cool: Allow the cookies to cool on the baking sheets for at least 10 minutes. This crucial cooling time allows them to set and firm up before you gently transfer them to a wire rack to cool completely.
