Welcome to a delightful baking journey where wholesome ingredients meet irresistible flavor! These Blackberry Bran Muffins are a true revelation, generously studded with plump, juicy berries and enriched with finely grated zucchini, luxurious sour cream, and a touch of sweet molasses. The result? Muffins that are incredibly sweet, perfectly moist, and wonderfully tender – an ideal choice for a satisfying, semi-healthy breakfast or an indulgent afternoon snack.
What makes these bran muffins truly stand out is the ingenious addition of sour cream. It’s the secret ingredient that transforms the texture, lending an unparalleled richness and moistness that you might not expect from a bran muffin. Coupled with the bursts of sweetness from fresh blackberries, these muffins become utterly irresistible, a treat that perfectly balances health-conscious eating with pure indulgence.

Indulge in the Wholesome Goodness of Blackberry Bran Muffins
As a devoted home baker, bran muffins are a staple in my kitchen. While my go-to recipe often features grated carrots and buttermilk, offering a reliably tasty start to the day, I’m always open to new inspiration. That’s why I was absolutely thrilled to discover this Blackberry Bran Muffin recipe from Sarah Sanneh, the incredibly talented co-owner and baker-in-chief of Pies ‘n’ Thighs, a beloved culinary gem on the lower east side of New York City. Knowing her reputation for creating comforting and delicious baked goods, I had no doubt that her take on bran muffins would be nothing short of spectacular.
This particular recipe elevates the classic bran muffin to new heights. The sour cream plays a pivotal role, infusing the muffins with a luxurious richness and a delicate tang that makes them truly irresistible. Each bite is an experience, with delightful pockets of juicy sweetness provided by the fresh blackberries. Beyond their incredible taste, these muffins also offer a wonderful sense of healthiness. The bran provides a generous dose of whole grains and insoluble fiber, making them a smart choice for those seeking a nutritious yet deeply satisfying treat. And let’s not forget the surprising hero: grated zucchini. It melts seamlessly into the batter, adding an extra layer of moisture without imparting a strong flavor, ensuring every muffin is incredibly tender and never dry.

When I first glanced at this Blackberry Bran Muffin recipe, I admit I was a little surprised not to see eggs listed in the ingredients. However, my initial concern quickly vanished as the baking soda performed its magic, leavening them perfectly. It just goes to show that even a seasoned baker always has something new to learn! To help you achieve consistently perfect muffins every time, here are some essential tips:
- Check Your Leavening Agents: Always ensure your baking soda is fresh and active. There’s typically an expiration date on the box, so make it a habit to check it periodically. An easy test for baking soda: mix a teaspoon with a tablespoon of vinegar. If it fizzes vigorously, it’s good to go! While baking powder isn’t used in this specific recipe, it’s generally more prone to expiring in your pantry, so keep an eye on it too for other recipes.
- The Art of Mixing Dry and Wet Ingredients: The golden rule for muffins is simple: combine dry ingredients separately, then combine wet ingredients separately, and finally, gently fold the wet into the dry. Start by whisking (or even sifting, for extra lightness) your dry ingredients together in a large bowl. In another bowl, mix your wet ingredients thoroughly. Then, pour the wet mixture into the dry, mixing *just until combined*.
- PRO-Tip: Avoid Over-mixing! This is perhaps the most crucial tip for muffin perfection. Over-mixing your batter can lead to tough, chewy muffins with peaked tops and undesirable “tunnels” running through them, rather than a beautifully rounded top and a consistent, tender crumb. Over-mixing develops gluten too much, which is great for bread but detrimental for muffins. I prefer to mix with a wooden spoon or a rubber spatula, using gentle strokes and stopping as soon as no streaks of dry flour remain. Never, ever use an electric mixer for muffin batter unless the recipe specifically calls for it!
- Handle Berries with Care: My blackberries were exceptionally large, which can sometimes lead to uneven distribution or too much moisture in one spot. If your berries are also large, I highly recommend cutting them in half. This recipe is also wonderfully adaptable to other seasonal berries, such as plump blueberries or sweet raspberries. When mixing them into the batter, be extra gentle to prevent them from bursting and “bleeding” their color throughout the batter. While a slight discoloration isn’t a problem, gentle folding helps maintain vibrant streaks of berry goodness.
- PRO-Tip: Prevent Berry Bleeding and Sinking: To minimize the chance of your delicate berries bleeding into the batter and to help prevent them from sinking to the bottom of your muffins during baking, toss them lightly in a tablespoon or two of flour before gently folding them into the batter. This thin coating helps suspend them throughout the muffin.
- Achieve Uniform Muffins with a Scoop: For perfectly sized and evenly baked muffins, use a quarter-cup cookie disher or ice cream scoop to divide the batter into your muffin tin. These particular bran muffins don’t rise dramatically high, so using a full scoop per slot will yield beautifully proportioned muffins. Consistent sizing ensures that all your muffins bake at the same rate, preventing some from being undercooked while others are overcooked.

Tender bran muffins studded with ripe fresh blackberries!
Ingredients
- 3 2/3 cups all-purpose flour
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1 cup wheat bran
- 1 1/2 cups unsalted butter, melted and cooled to room temperature
- 3/4 cup light brown sugar, firmly packed
- 2/3 cup molasses
- 1 cup finely shredded zucchini
- 3 cups sour cream
- 1 1/2 cups fresh blackberries
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line two standard 12-cup muffin tins with paper cupcake liners.
- In a large bowl, whisk together the flour, baking soda, salt, and bran until thoroughly combined. This ensures an even distribution of leavening.
- In a separate medium bowl, combine the melted butter (ensuring it’s cooled), light brown sugar, molasses, shredded zucchini, and sour cream. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients. Using a wooden spoon or rubber spatula, mix gently just until the ingredients are combined and no dry streaks of flour remain. Fold in the blackberries with care, trying your best to keep them from bursting.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Bake for 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool slightly before serving.
Notes
Recipe courtesy of Sarah Sanneh. For best results, ensure all cold ingredients (like sour cream) are at room temperature before mixing. If your blackberries are very large, consider cutting them in half to distribute them more evenly.
