- ½ to ¾ cup ice-cold water
For the Tomato Filling:
- 2 pints cherry or grape tomatoes, cut in half lengthwise
- 3 garlic cloves, minced
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped flat leaf parsley
- 2 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- Crumbled feta or shaved Parmesan cheese, for topping

- Divide the dough into two equal halves. Place each half on a large piece of plastic wrap and shape into a flattened disk. Wrap tightly in plastic wrap and chill in the refrigerator for a minimum of 2 hours, or up to 24 hours.
- Prepare the Filling: In a medium bowl, combine the halved tomatoes, minced garlic, chopped basil, oregano, parsley, red wine vinegar, olive oil, 1 teaspoon kosher salt, and black pepper. Toss gently to combine. Let the mixture stand at room temperature for 1 to 1 ½ hours to allow the flavors to meld. Afterwards, drain any excess liquid from the tomatoes.
- Assemble & Bake: Preheat your oven to 400°F (200°C). Lightly flour a clean work surface. Take one disk of chilled dough and roll it out to approximately ¼-inch thickness.
- Using a 2 ½-inch round cutter, cut out 12 rounds from the dough. Reroll any dough scraps as needed to get more rounds. Lightly grease a 12-cup miniature muffin pan with non-stick cooking spray. Press each dough round into the cups of the muffin pan, gently shaping them so the dough comes slightly up the sides.
- Repeat the rolling and cutting procedure with the remaining dough disk and another 12-cup miniature muffin pan.
- Divide the marinated tomato mixture evenly among the prepared dough-lined muffin cups.
