  • 2 slices white sandwich bread, pulsed in food processor to make bread crumbs
  • 1 pound ground turkey (dark meat)
  • ½ cup grated sharp cheddar cheese
  • 2 tablespoons grated onion
  • 1 teaspoon kosher salt
  • Freshly ground pepper
  • 1 tablespoon olive oil
  • 12 party-size rolls

For tomatoes:

  • 6 plum tomatoes, halved lengthwise, cores and seeds removed
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 large garlic clove, minced
  • 1 teaspoon sugar
  • ¾ teaspoon kosher salt
  • Freshly ground black pepper

Instructions

  1. In a large bowl, gently mix the ground turkey, fresh bread crumbs, grated cheddar cheese, grated onion, kosher salt, and freshly ground pepper. Mix just until combined, being careful not to overwork the meat.
  2. Form the mixture into approximately 12 small patties, each about 2 inches in diameter and roughly ½ inch thick.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, carefully place the turkey patties in the skillet, ensuring not to overcrowd it. Cook the patties for 3-5 minutes per side, or until they are nicely browned on the exterior and cooked through to an internal temperature of 165ºF.

To make roasted tomatoes:
