- 4 boneless, skinless chicken breasts, cubed (use 2-3 if particularly large)
- 2 cloves garlic, finely minced
- 1-inch piece fresh ginger, peeled and minced
- 1 tablespoon soy sauce
- 2 tablespoons granulated sugar
- 1 tablespoon plus 1 teaspoon cornstarch

- 1 tablespoon dry sherry

Mix well to coat the chicken and let it marinate for approximately 15 minutes. In a separate small bowl, mix the remaining 1 tablespoon of cornstarch with 1/3 cup of water to create a slurry.
- Heat a large nonstick frying pan or wok over high heat until very hot. Add one tablespoon of the vegetable oil. Once the oil shimmers, add the broccoli florets and stir-fry for about 1 minute. Add the remaining ginger, garlic, 2 tablespoons of water, and 1/4 teaspoon of salt. Continue to stir-fry for about 2 more minutes, ensuring the broccoli remains bright green and crisp-tender. Remove the cooked broccoli to a plate and set aside.
- Reheat the pan over high heat and add the remaining two tablespoons of vegetable oil. Add the marinated chicken along with the crushed red pepper flakes (if using). Stir-fry the chicken until it is lightly browned on all sides, which should take approximately 3 minutes. Pour in the oyster sauce, then return the stir-fried broccoli to the pan.
